Easy Baking “The SK Way”|| Healthier Homemade Granola Bars

Happy Wednesday, everyone! A couple of weeks ago I asked what types of food/cooking/recipe posts you were interested in and we had votes across the board which is so exciting! I am hoping to share different types of recipes on the blog and on Instagram to include everyone’s preferences! Today, I am going to show you how to make healthier homemade no-bake granola bars that are perfect to have with breakfast, as a mid-day snack, or as a healthier dessert option.

With a nut allergy, it can be difficult for me to find granola bars in the store that I can eat. When I find ones that I can have, they often make up in sugar for what they lack in protein which is not necessarily what I’m looking for all the time. I decided that I would be better off trying to make my own. These granola bars are delicious and super easy to make! I adapted this recipe from one I found online which will be linked here.

What You’ll Need

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup packed brown sugar
  • 2 cups quick-cooking oats (make sure they are not rolled oats!)
  • 1 cup of Rice Chex (slightly crushed)
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons of mini chocolate chips
    • My family loves chocolate so we doubled this to 4 tablespoons! Since the chips are mini they’re not too overpowering – the Enjoy Life brand is my favorite but any kind is perfectly fine!

How To Make

  1. Combine the Oats & Rice Chex in a mixing bowl and set aside
    • I added 1/4 cup of shredded coconut to this mixture as well but that step is completely optional!
  1. In a small saucepan, melt the butter, honey, and brown sugar together until the entire mixture is bubbling. Reduce heat and cook for 2 minutes
  1. Add vanilla to the saucepan and stir. Pour contents of pan over the dry ingredients and stir until coated.
  1. Lightly grease one half of a baking tray and press out the contents of the mixing bowl to one side until about 3/4 in thick.
  1. Press the mini chocolate chips on top and let cool on the tray for about 2 hours before cutting into bars.

That’s it! They are super simple, easy to make, and slightly healthier than the packaged granola bars you may find at the store. We usually layer the bars with parchment paper in a Tupperware container for easy storage. Besides the 2-hour wait time at the end, they only take about 10-15 minutes to make!
