Every year, I help my Granny bake the pumpkin pie for Thanksgiving and always help my mom make her signature from-scratch chocolate chip cookies at Christmas. Aside from holidays and the occasional box of brownies, I never really baked anything spontaneously or just for the fun of it! Over the past couple of weeks, my sister and I have been finding some recipes that we felt not only might be fun to try but are also easy to make – I’m so excited to share one of them with you today: Loaded Oatmeal Chocolate Chip Cookies!

My sister made these last week and they were gone so quickly! I made the next batch and doubled the recipe. It was supposed to make between 16-20 cookies, but we got about 30 medium-sized ones in the end. The doubled recipe is listed below:

- 2 eggs
- 2 sticks of butter
- 1 cup of light brown sugar
- 2 tbsp vanilla extract
Mix this all together by hand or with a mixer then, add:
- 2 cups of oats (we used steel cut)
- 2 cups of flour
- 1 cup of shredded coconut
- 1 tsp of baking soda
- 1/2 tsp of salt
Mix again either by hand or with a mixer
- add 2 cups of chocolate chips and mix into the dough
Chill the dough for about 10 minutes in the freezer – it helps to prevent spreading
Bake at 350 for 11-13 minutes and allow to cool on the tray before serving
