Every so often, I get the itch to try some new recipes! I feel like my husband and I have a good number of go-to options but when the weather starts warming up, I always find myself looking for something new and fresh to add into the rotation. These 4 recipes are new favorites of ours that will be on repeat all throughout the spring and summer time! All of these recipes can be easily prepped ahead and save well for leftovers! Many of them also include overlapping ingredients which makes grocery shopping and planning your weekly menu a breeze (and budget-friendly)! I hope you enjoy!
BBQ Chicken Sliders
This recipe just screams warm weather to me! This meal is a combination of a few different Pinterest recipes and turned out so good! Making the barbecue chicken in the crockpot is a great option for busy nights. I decided to try these homemade Kings Hawaiian rolls which turned out really well! While it was a bit more time consuming, the recipe was pretty easy so I will definitely make these again. I added some coleslaw and corn on the cob for sides topped with butter, black pepper, garlic, parsley, and parmesan cheese.

Asian Ground Turkey Bowls
This recipe is one that we had while visiting my sister-in-law a few weeks back! It is absolutely delicious and not as involved as the website makes it appear. Something I love about this recipe is the versatility. You can add virtually any toppings you like, and the homemade spicy mayo can also be paired with salmon instead of the ground turkey. We opted for carrots, cucumber, shredded cabbage(tip: use the leftover cabbage from the BBQ chicken coleslaw without the dressing!), and avocado for our add-ins and served it over rice. The key to the rice is definitely a rice cooker! I never thought to invest in one but now that I have, I will never go back to the stovetop! It streamlines the entire cooking process and comes out perfect every time!

Greek Chicken Bowls
Another bowl recipe that is perfect for busy weeknights! I didn’t follow a specific recipe for this one but threw it together with ingredients I had on hand. This is perfect to make for a group and can be easily prepped ahead if needed. Mine usually include:
- rice
- grilled chicken
- cucumber
- red onion
- spinach
- feta cheese
- tzatziki

Italian-Style Pasta Salad
This is another recipe that has “summer” written all over it! This is the perfect make-ahead dish to bring to barbecues and gatherings, or prep ahead for a quick lunch throughout the week. I added some spinach & feta chicken sausage to make this more filling as a dinner but would still be so delicious on its own! I added:
- pasta of your choice
- red bell pepper
- red onion
- fresh mozzarella cheese
- basil (bonus if you have fresh basil leaves!)
- spinach
- primal kitchen Italian dressing
